“I’m super super excited for this project, but I’m absolutely terrified. I’m just in the mode of to do lists. At this point I don’t have time to take it back. I’m already here, I’m invested. I’m a self-conscious person, but knowing that they asked me to do this for a reason, whether I don’t see it or not, they see it. I’ve had a couple other situations where me going to culinary school my chef approached me, and asked if I’d like to apprentice under him, at SAIT. There’s been a few situations in my life where, like I had my daughter when I was twenty-one, that was another thing, where I was like I don’t have time, just make it happen. You just go, you learn as you go.”
