“I accidentally came into cooking. I started off years ago in education, and maybe the educational sense called to me. I worked in a small restaurant in Manitoba years ago, and we did a similar thing. We were out on the edge of the city, we had a large piece of land, and we smoked our own fish. I fed horses on my break. The old chef here (at River Cafe), Glen, was friends with the chef in Winnipeg.

Then I came here – before that I was at another place that was closing down – bad politicians, bad money – and I applied here, and it felt like home. Here it was like, we care about the people we serve. My god, this is what culinary is supposed to be about. I feel like if I hadn’t found this place, I don’t know if I would have continued in culinary for as long.”
